Mozzarella is a sliceable curd cheese. The process of making this famous Italian cheese is called “pasta filata”. Curd is dipped in hot whey until it becomes elastic and stringy. It is then kneaded and stretched until it has a smooth consistency. Finally it’s formed into balls and stored in water or brine. Mozzarella cheese was originally made from the milk of water buffaloes.
